1. When you cook steak you’ve gotta plan ahead, and that means taking it out well in advance of actually cooking it. Most importantly get steak to room temp.
2. Season your steak with olive oil, sea salt and black pepper, and season with wild abandon: You should be able to actually see the salt and pepper.
3. Heat up your pan for 3 mins, then place in steak, remember Turn the steak only once, otherwise it will dry out.
4. Take steak out of pan and let your steak rest for 3 mins before cutting. This allows the juices to settle and the muscle fibers to relax, which ensures the steak is tender.
5. Make sure you cut perpendicular to the steak’s natural grain. It’ll slice easier, look prettier, and taste better.
